Sweet and Sour Pork Chops with Pineapple




4 pork chops

Salt and pepper

30 ml (corn flour) maizena

30 g butter

20 ml oil

1 onion, chopped

2 garlic cloves, chopped

1 red sweet pepper, chopped

1 x 410 g pineapple pieces

20 ml coriander, chopped


Season the chops with salt and pepper and dust with corn flour. Heat some of the butter and oil in a large pan and fry until golden brown. Remove from the pan and heat the rest of the butter and oil. Add the onion, garlic and pepper and fry for about 1 minute. Add the pineapple pieces plus the juice and bring to the boil. Add the chops and the coriander to the sauce and simmer until done. Season with salt and pepper and serve with rice or noodles.
