Sticky Chicken with Peach Halves




80 ml flour

Salt and pepper

6 chicken portions (drumsticks and thighs)

30 g butter

20 ml olive oil

1 x 410 g peach halves, drained and chopped

20 ml soft brown sugar

10 ml soya sauce

Zest and juice of one small orange

60 ml chopped parsley


Season the flour with salt and pepper and dust the chicken with the flour. Heat the butter and olive oil in a large pan and fry the chicken until golden brown and remove from the pan. Heat a griddle pan and fry the peaches until golden brown (just for some colour).  Add the brown sugar, soya, zest and juice, chopped peach and parsley and fry for about 3 minutes or until sticky. Return the chicken and the peaches to the pan and bring to the boil. Lower the heat and simmer until cooked. Season to taste and serve with potatoes and green salad.  Garnish with parsley.
