Lentil Salad with Canned Fruit Pieces and Nuts

 

SERVES 4

 

200 g lentils

1 x 410 g chick peas

20 ml balsamic vinegar

20 ml olive oil

1 small onion, finely chopped

2 celery sticks, finely chopped

50 g raisins

1 large carrot, grated

1 green pepper, finely chopped

30 ml parsley, chopped

1 x 410 g fruit cocktail, drained

100 g nuts, chopped

 

Cook the lentils until done, wash under cold water and drain. Drain the chick peas and wash under cold water. Mix the lentils and chick peas in a large mixing bowl. Add the rest of the ingredients and season to taste.
