Apple Puff Pies




500 g butter puff pastry

15 ml soft brown sugar

1 x 410 g pie apples

5 ml cinnamon

10 ml lemon zest

1 egg, whisked


Preheat the oven to 220 °C. Roll out the puff party and cut  into about 12 round disks. Use a smaller cookie cutter and make an incision on each round party disk. Don’t push to hard. Arrange the pastry on a baking tin. Divide brown sugar and apples amongst the pastry. Sprinkle the cinnamon and zest on top of the apples. Brush the edges with egg. Allow the pastry to rest in the fridge for about 30 minutes. Bake the pies for about 30 minutes or until golden brown and cooked. Garnish with mint leaves and serve with custard.
